What makes a paper airplane descend, ascend or turn?

What makes a paper airplane elevate or turn? I'm making a few paper airplanes and i want to know what wings i want to make to descend or ascend. I know the Float paper airplane design doesn't go up, it just floats a bit and goes down. Dmitri's paper airplane ascends for a while and then descends for a while.
